Process Management Consulting performs several audits using supplier proprietary audit checklists. One of our key audit specifiers is Yum! Brands, the parent company for Pizza Hut, Taco Bell, and KFC. These checks lists are confidential and may only be shared with Yum! suppliers after gaining approval by concept-specific Product Managers.
Audits are scored with each category having a weighted scoring. Scoring for each question is prescribed, with scoring sometimes based on the number of observations and sometimes based specifically on what is missing from the requirements list. Passing the audit requires a minimum 85 score with no Automatic Failure Items.
Quality Systems Audit and Quality Systems Core Audit

Product Manager: the Quality Systems Audit and Quality Systems Core Audit. The specific audit required is determined by the Product Manager. Although the purpose of each audit is different, both audits contain many of the same questions (e.g. HACCP Plan review, traceability exercise, etc).
The primary focus of the QSA is on conformance to product specifications, process control and quality assurance practices. Audits are concept-specific and require the site to be producing. These audits take from 1 ½ days to a full 2 days on site.ervations and sometimes based specifically on what is missing from the requirements list. Passing the audit requires a minimum 85 score with no Automatic Failure Items.
Food Safety Audit
Yum! Food Safety Audits are used in supplier approvals and ongoing food safety evaluations. Basic food safety practices are addressed including:
- HACCP
- Traceability and Recall
- Pest control
- Sanitation
- Food Defense
- Facility Condition
- Hygiene
The FSA takes 1 ½ days on site to complete.
GFSI audits may be accepted in place of the FSA in accordance with Yum! guidelines and approval by the concept Product Manager.
Packaging Audit
The Yum! Packaging audit is a food safety audit that has been customized for packaging suppliers. These audits address:
- Facility Condition
- Hygiene
- Sanitation
- Pest Control
- Traceability and Recall
Distribution Food Safety and Quality Audit (Warehouse) and Transportation Audit
Distribution (Warehouse) and Transportation audits are required twice per year although reduced monitoring may occur based on high scores, low complaint rates and a sustained exemplary history of service. Audits are assigned by concept. PMC is one of three approved providers of these audits in the USA.
The Distribution Food Safety and Quality Audit is focused on controlling three primary processes: receiving, storing and shipping. Key areas of the audit include:
- Food Defense
- Food Safety Controls (similar to HACCP)
- Traceability and Recall
- Outside Storage
- Employee Hygiene
- Pickup and delivery protocols
- Facilities and Equipment
- Receiving and Loading protocols
- Inventory rotation
- Temperature Control
- Sanitation
- Pest Control
The Transportation Audits for temperature sensitive products require the placement of temperature monitoring devices with product at the processing facility. Monitors are removed from the product upon arrival at the restaurant and returned to the auditor. The data is electronically downloaded by the auditor and compared against product specifications.
